Aksaray Un Kurabiyesi / Aksaray Asker Kurabiyesi (Aksaray flour cookie, also known as Aksaray soldier cookie) is a traditional bakery product unique to the Central district of Aksaray province, Türkiye. Registered with a geographical indication designation of origin on June 14, 2022, under the Industrial Property Law No. 6769, this cookie has deep historical roots and holds a significant place in the region’s culinary culture. The name “soldier cookie” originates from the tradition of gifting it during soldier send-off ceremonies.

Product Characteristics

The cookie is made from a simple dough of butter, granulated sugar, and wheat flour. During the shaping process, the dough is formed into long, thin strips, cut into 5 cm pieces, and shaped into an “S” form. When baked, it takes on a light yellow color with a slightly golden appearance. Its melt-in-the-mouth texture is a defining characteristic.

Preparation

Ingredients for 40 cookies:

  • 250 g butter
  • 200 g granulated sugar
  • 350 g wheat flour


The butter is melted and cooled, then mixed with sugar that has been ground into a powder in a mortar. Flour is gradually added, and the dough is kneaded for about 7–8 minutes until it reaches a non-sticky consistency.


Walnut-sized portions are taken and shaped into cylinders 2 cm wide and 20 cm long. These are cut into 5 cm pieces, formed into an “S” shape, and placed on a baking tray. The cookies are baked in a preheated oven at 160°C for approximately 15–17 minutes until lightly golden. The oven door must remain closed during baking to prevent the cookies from hardening or crumbling. They are served after cooling.

All stages of production must take place within the boundaries of Aksaray’s Central district. This requirement is due to the product’s reputation and unique production method, which are tied to the geographical region.

Inspection Process

Inspections are coordinated by the Aksaray Municipality, with a committee of at least three experts from the Aksaray Provincial Directorate of Agriculture and Forestry and the Aksaray Provincial Directorate of Culture and Tourism. Inspections occur at least once a year, with additional checks conducted as needed or in response to complaints. Inspection criteria include ingredient compliance, adherence to the production method, and proper use of the designation of origin emblem.

Usage

The product packaging must bear the “Aksaray Un Kurabiyesi / Aksaray Asker Kurabiyesi” label and the designation of origin emblem. If not feasible on the packaging, the label and emblem must be prominently displayed at the production facility.
