Bartın pumpkin twist dessert is a traditional pastry specific to the province of Bartın. Protected under the Protected Geographical Indication in accordance with Industrial Property Law No. 6769, it was officially registered on October 9, 2020. The registration was submitted by Bartın Municipality, and the product’s geographical boundary is limited to the province of Bartın.
Geographical Boundary and Production Conditions
The pumpkin and walnut used in Bartın pumpkin twist dessert, along with the twisting baking technique, require region-specific craftsmanship and traditional methods. Therefore, all stages of production must take place within the boundaries of Bartın province.
Product Characteristics
This dessert is a light delicacy made with pumpkin and walnut. Traditionally, it has been prepared in small home ovens after weekly bread baking in households throughout the region. Utilizing locally abundant pumpkin and walnuts, the recipe has been passed down through generations. Its distinguishing feature is the method: grated pumpkin and walnut filling is placed inside rolled dough, shaped into twists, arranged sequentially on a tray, and after baking, soaked with syrup. This unique production style is specific to the region and gives the dessert its association with the name “Bartın.”
Preparation
The dough is prepared using flour, eggs, warm water, and starch. After resting, the dough is divided into five portions and rolled into sheets. For the filling, pumpkin is grated and drained, then mixed with crushed walnuts and sugar. Each sheet is cut in half lengthwise, the filling is placed along the long edge, and it is tightly rolled into a twist. The rolls are arranged in a circular pattern on a greased tray, brushed with melted margarine or butter, and baked in an oven at 180°C without fan for 45–50 minutes.
The syrup is prepared by boiling water, sugar, and lemon juice, then cooled. Once the baked dessert cools slightly, cold syrup is poured over it, and it is covered with a cloth to absorb the syrup. After cooling completely, the dessert is cut into squares or diamonds for serving.
Inspection Process
The product is monitored under the coordination of Bartın Municipality by an inspection committee of at least three members appointed by Bartın Provincial Directorate of Agriculture and Forestry, Bartın Provincial Directorate of Culture and Tourism, and Bartın Chamber of Commerce and Industry. Inspections are conducted at least once a year, and additional inspections may be performed as needed or upon complaint. Inspection criteria include the suitability of ingredients, adherence to production methods, and correct use of the Protected Geographical Indication emblem.
