Diyarbakır Almond Paste / Diyarbakır Lebzüniye is one of the traditional desserts deeply rooted in the culinary culture of Diyarbakır. Listed under the Industrial Property Law No. 6769 as a protected geographical indication (mahreç işareti), the product was registered on October 11, 2021, and granted geographical indication status under the condition that it must be produced exclusively within the borders of Diyarbakır province.
Description and Distinctive Features
This traditional dessert is made primarily from sugar, almonds, and water. Optionally, rose water, cloves, and/or cinnamon may be used as natural aromatic additions. No food additives, artificial flavors, or flavoring agents are used in its production. Diyarbakır Almond Paste / Lebzüniye reflects the unique characteristics of the region both in its ingredients and in its method of preparation. Its reputation and recognition have developed through Diyarbakır’s cultural heritage and gain their meaning within this geographical context.
Preparation
Average ingredient quantities for a preparation serving six people are as follows:
- 2 cups white granulated sugar or powdered sugar
- 1 cup almonds
- 1 teacup water
- Optional: 30 ml rose water
- Optional: 5 g spices (clove and/or cinnamon)
The almonds are first boiled, then transferred to cold water to remove their skins and dried. The almonds are ground together with powdered sugar (or granulated sugar pounded into powder) until a homogeneous mixture is obtained. Water is gradually added while kneading. Optional aromatic ingredients can be incorporated at this stage. The resulting dough-like paste is rolled out on a flat surface with a rolling pin to a thickness of about one finger and then cut into square, diamond, oval, or round shapes for serving.
Storage Conditions
The product should be stored in cool, odorless, and dry environments. It is recommended to consume it within the advised shelf life period.
Geographical Boundaries and Production Conditions
All stages of production for Diyarbakır Almond Paste / Lebzüniye must take place within the province of Diyarbakır. The product’s fame and authenticity are directly linked to this geographical setting.
Inspection Mechanism
To ensure the protection of the geographical indication and the maintenance of production standards, inspections are carried out under the coordination of the Diyarbakır Chamber of Commerce and Industry. The inspection body consists of representatives from the Diyarbakır Chamber of Commerce and Industry and the Diyarbakır Provincial Directorate of Agriculture and Forestry. Inspections are conducted at least once a year and additionally when complaints or special needs arise. During inspections, the ingredients and production methods are checked; in case of non-compliance, necessary notifications are made to the relevant individuals or institutions.
