Kemaliye Lök Dessert is a traditional confection specific to Kemaliye, formerly known as Eğin, a district of Erzincan Province in eastern Turkey. Locally referred to as Eğin Lök Dessert, this delicacy is primarily prepared by combining dried mulberry fruit leather (pestil) with finely ground walnut kernels, resulting in a natural and additive-free product. Notably, no refined sugar, glucose syrup, or artificial additives are used in its production.
Production Process
The preparation of Lök Dessert involves several distinct stages. First, ripe white mulberries are harvested and boiled over a wood fire using traditional methods until they reach a dense, molasses-like consistency. This thick mixture is then spread onto large cloths and dried under the sun, forming fruit leather sheets (pestil). Before use, these sheets are slightly moistened to achieve a pliable texture.

Meanwhile, walnut kernels are pounded in stone mortars until they acquire a coarse, flour-like consistency. The softened mulberry sheets are then filled with the ground walnut mixture, rolled into cylindrical shapes, and left to rest for a period of time. The resulting confection combines the intense aroma of dried mulberries with the rich flavor of walnuts, creating a satisfying and durable sweet that is both energizing and satiating.
Traditional Context and Cultural Significance
Kemaliye Lök Dessert has been produced and consumed in the Kemaliye region for over a century, with its traditional methods passed down from generation to generation. Locals often describe it as “the mystical union of mulberry and walnut.” Historically, it has been an essential part of winter provisions and is customarily served during social gatherings and hospitality rituals.
Its energizing properties, derived from the nutrient-dense mulberry and walnut combination, have made it especially popular in the colder months. The preparation process is predominantly carried out by women, fostering social cohesion and reinforcing the sustainability of local cultural heritage through collective production practices.
Geographical Indication Registration
On August 21, 2023, Kemaliye Lök Dessert was registered as a geographical indication of the mahreç işareti (designation of origin) type by the Turkish Patent and Trademark Office. The registration process was initiated by the Kemaliye Municipality and, following the application filed on January 26, 2023 (application number C2023/000035), the product was officially recorded under registration number 1452.

This registration safeguards the unique qualities associated with its geographical origin and provides legal protection for local producers.
Consumption and Storage Conditions
Due to its natural composition, Lök Dessert has a long shelf life and can be stored for extended periods without spoilage. When kept in cool and dry conditions, it retains its freshness for several months, which historically made it an essential food item for winter storage. Today, it continues to be a popular natural snack among both the local population and visitors to the region.
