Milas Çekişke Olives are a type of processed green olive unique to the Milas district of Muğla province in Türkiye. These olives are known for their large size, vibrant green color, and distinctive mildly tangy flavor. Traditionally processed using local methods, Milas Çekişke Olives hold a special place in both table consumption and the regional culinary culture.
Registered as a Protected Geographical Indication under the Industrial Property Law No. 6769, the product was officially recognized on May 17, 2022. The registration process was carried out by the Milas Chamber of Commerce and Industry.
Product Characteristics
Milas Çekişke Olives are prepared using water, rock salt, and citric acid (lemon salt). As one of the traditional elements of Milas cuisine, the olives are distinguished by the skillful processing methods used to remove their natural bitterness. The reputation and recognition of the product are directly tied to its geographical origin, the Milas district.
Preparation
The olives used in production are generally of the Memecik variety grown in the Milas region. They are harvested before full ripening, then carefully cracked without breaking the pits or damaging the flesh.
The cracked olives are placed into food-grade containers and covered with water. After about one week, the water is drained and replaced with fresh water. This process is repeated every two days, for a total of 7–8 times, allowing the olives to lose their bitterness and develop their characteristic taste.
In the final stage, the olives are again covered with water, and 50 g of rock salt and/or coarse brine salt along with 30 g of citric acid are added. This mixture helps preserve the olives, preventing discoloration and softening over time.
Storage and Serving
Milas Çekişke Olives should be stored in cool, odorless, and dry environments, away from direct sunlight. They are offered to consumers either in bulk or in food-safe packaging, with labeling in accordance with relevant regulations.
During serving, the olives are transferred to plates without hand contact, typically in portions suitable for single-meal consumption. Depending on preference, extra virgin olive oil and/or lemon juice may be added.
Geographical Boundary and Production Conditions
All production stages of Milas Çekişke Olives must take place within the borders of Milas district in Muğla province. The production process, particularly the bitterness-removal stage, requires specialized skill and techniques, which justify its designation as a geographical indication.
Inspection
The production method and use of the geographical indication are supervised by an inspection committee coordinated by the Milas Chamber of Commerce and Industry, with the participation of the Milas District Directorate of Agriculture and Forestry. The committee consists of at least three members and conducts inspections at least once a year. Additional inspections may be carried out when necessary or in response to complaints. All inspection results are reported to the Turkish Patent and Trademark Office.
The inspection process evaluates compliance with ingredient standards and adherence to the specified production method. Any irregularities identified are reported to the relevant parties. The inspection body may seek expert assistance from public or private institutions, while the registrant organization is responsible for handling legal procedures.
