Şanlıurfa ağzı yumuk is a traditional pastry unique to the cuisine of Şanlıurfa, with a history dating back to the past. This product, all stages of which must be carried out within the borders of Şanlıurfa province, was registered as a geographical indication with the designation of origin under registration number 1184 on August 2, 2022.

Ingredients
For the Dough
- 1 kg wheat flour
- 100 g yogurt
- 30 g clarified butter (Şanlıurfa Sadeyağı)
- 5 g salt
- 5 ml lemon juice
- 200 ml water
For the Filling
- 1 kg lean lamb mince
- 2 medium onions
- 5 g black pepper
- 90 g clarified butter (Şanlıurfa Sadeyağı)
- 8 g salt
For Frying
- 700 ml sunflower oil
Preparation
For the filling to be used in the preparation of ağzı yumuk, lean mince, finely chopped onion, and clarified butter are sautéed together. Then, salt and black pepper are added, mixed, and left to cool. Meanwhile, the dough is prepared by kneading flour, yogurt, clarified butter, lemon juice, salt, and water together until a soft consistency is obtained. The dough is divided into walnut-sized pieces, each rolled out to the size of a small tea plate. The minced filling is placed in the center of each piece, and the edges are gathered and closed. During this process, light pressure is applied without squeezing too tightly to prevent the filling from spilling out and to ensure the seam is properly cooked. The shaped pieces are fried in sunflower oil, first with the gathered side facing down, then turned to cook the other side. Once fried, they are removed from the oil and preferably served with bostana (a local salad).
Geographical Indication
Şanlıurfa ağzı yumuk was registered on August 2, 2022, under registration number 1184, as a geographical indication of the type “designation of origin.” The application was submitted by the Şanlıurfa Metropolitan Municipality, and the registration was granted by the Turkish Patent and Trademark Office. The registration is based on the product’s traditional production method unique to the region, its place in the local culinary culture, and its close connection with geographically indicated clarified butter. Accordingly, all production stages of Şanlıurfa ağzı yumuk must be carried out within the borders of Şanlıurfa province.
Inspection
The inspection of the product is carried out under the coordination of the Şanlıurfa Metropolitan Municipality by a control body consisting of at least three members, including experts from the Şanlıurfa Restaurant, Köfte, and Confectionery Guild, the Şanlıurfa Bakers’ Chamber of Tradesmen and Craftsmen, and the Şanlıurfa Metropolitan Municipality. Inspections are conducted periodically at least once a year, as well as when deemed necessary or upon complaint. During inspections, the suitability of the ingredients used in production, compliance with the production method, and the correct use of the phrase “Şanlıurfa Ağzı Yumuk” together with the designation of origin emblem on the product are checked.
