Pütürge Dermanı is a traditional spice blend prepared in the Pütürge district. It contains a variety of herbs such as dried hot chili pepper, mint, oregano, parsley, basil, stinging nettle, and sage, along with black pepper, chickpeas, wheat, corn, cracked wheat, menengiç (chedene), walnuts, peanuts, hazelnuts, apricot kernels, sunflower seeds, pumpkin and watermelon seeds, melon seeds, sesame, cumin, and dill. Optional additions may include dried eggplant and tomato, çemen, almonds, and other dried plants.


No preservatives are used in its preparation. The ingredients are roasted over wood fire and then ground in stone mills, followed by sifting through a fine sieve. This method preserves the original flavor and quality of Pütürge Dermanı.


Pütürge Dermanı holds an important place in the regional culinary culture and is commonly consumed with bread alongside butter, olive oil, or rendered fat, especially at breakfast. It is also used as a flavoring agent in soups, dishes, and salads. This spice blend is closely tied to its geographical origin and stands out due to its region-specific selection of ingredients.

Production Method

In the production of Pütürge Dermanı, priority is given to legumes, cereals, fruits, vegetables, and various plants native to the region and grown within its geographical boundaries. This ensures that both the flavor and quality of the product are fully integrated with the region’s natural richness.


Pütürge Dermanı - Turkish Patent

Ingredients

  • 10 kg chickpeas
  • 7 kg wheat
  • 10 g corn
  • 7 kg cracked wheat
  • 1 kg menengiç (chedene)
  • 1 kg apricot kernels
  • 1 kg walnuts
  • 500 g peanuts
  • 500 g hazelnuts
  • 1 kg sunflower seeds
  • 1 kg pumpkin seeds
  • 250 g watermelon seeds
  • 250 g melon seeds
  • 500 g sesame
  • 15 g cumin
  • 1 kg dried hot chili pepper
  • 1 kg dried mint
  • 1 kg oregano
  • 250 g dried parsley
  • 150 g dried basil
  • 150 g dried stinging nettle
  • 150 g sage
  • 500 g dill
  • 100 g black pepper
  • 750 g salt


The ingredients used in producing Pütürge Dermanı—cereals, various seeds, dried herbs, and other natural materials—are classified into similar groups. Each group is carefully roasted separately over wood fire for approximately 15 minutes to bring out its optimal flavor and aroma. After roasting, the materials are spread on a clean, breathable cloth and left to cool completely.


Once cooled, the ingredients are placed in a large cloth sack or suitable container and thoroughly mixed to form a homogeneous blend. This mixture is then ground in traditional stone mills and passed through a fine-mesh sieve to achieve a smoother consistency. Finally, the resulting powder is carefully packed into food-safe packaging designed to preserve its freshness before being delivered to consumers.


Pütürge Dermanı can be stored for up to two years in cool, dry conditions.

Consequently, the reputation and uniqueness of Pütürge Dermanı are inseparable from its geographical origin, a connection of great cultural and gastronomic importance. All stages of production, from start to finish, are carried out within the defined geographical boundaries using traditional methods and local craftsmanship, ensuring the product retains its authentic and original character.

Monitoring

Monitoring is conducted by a control board composed of designated experts from Pütürge Municipality, Pütürge Chamber of Agriculture, and Pütürge District Directorate of Agriculture and Forestry, under the coordination of Pütürge Municipality. These inspections are carried out at least once annually and may also be conducted whenever necessary or upon receipt of complaints. The control board rigorously verifies the suitability of ingredients used in production, compliance with established production methods, and the correct use of the “Pütürge Dermanı” label and official emblem. During the monitoring process, support may be obtained from public or private institutions or their qualified personnel, or services may be procured. The registered owner of the product is responsible for initiating legal proceedings to protect its rights.
