• Appearance: The wrap, which consists of a filling of boiled chickpeas, is served wrapped in griddle bread. The outer surface of the bread is heated in a stone oven or griddle to achieve crispiness.
• Taste and Aroma: The plain taste of the chickpeas, combined with ingredients such as olive oil, cumin, isot (Urfa pepper flakes), and lemon juice, creates a unique, slightly spicy and sour aroma.
• Structure: The boiled chickpeas are wrapped whole in the bread without being mashed. This offers a distinctive feature both texturally and visually.
• Distinctive Features: The most fundamental distinctive feature of the product is that pure boiled chickpeas, wrapped with griddle bread heated in a stone oven, are flavored with various spices and served plainly. The chickpeas are prepared by being pre-blended with salt, cumin, olive oil, and lemon.

Production Method
Gaziantep Chickpea Wrap is prepared through the following traditional stages:
• Chickpea Preparation: Chickpeas are soaked in water the night before. The next day, they are boiled until soft but kept firm enough not to be mashed.
• Flavoring: The boiled chickpeas are mixed by blending with olive oil, cumin, salt, isot (Urfa pepper flakes), and lemon juice. This mixture ensures that the flavor is distributed homogeneously.
• Bread Preparation: For the wrap, traditional griddle bread baked in a stone oven or on a griddle is used. Before making the wrap, the bread is heated in a stone oven to make it hot.
• Wrapping: The prepared chickpea filling is placed in the center of the hot griddle bread. In some presentations, fresh greens or a slice of lemon may also be added.
• Serving: The product is usually served plain and is mostly consumed in the early morning hours. In some restaurants, it may be served with pickles, hot peppers, or ayran (a yogurt drink).
