Made by combining different fats such as tail fat, butterfat, butter and sunflower oil, this cookie has a diameter of approximately 10 cm and a semi-spherical shape with a slightly raised center. Its surface is decorated with a floral motif created using halved, shell-free raw pistachios. The crisp texture depends on the balance of the fats used.
Ingredients and Production Method
In a typical batch for four people, Afyonkarahisar engagement cookie is made using the following ingredients:
- 500 g specialty wheat flour
- 100 g tail fat
- 25 g butterfat
- 25 g butter
- 250 ml sunflower oil
- 200 g powdered white sugar
- 6 g baking soda
- 60 g shelled raw pistachios
The fats and sugar are beaten together until white and fluffy. Baking soda and flour are then added to form a soft dough. Portions of approximately 125 g are rolled by hand into a semi-spherical shape with a slightly raised center. Additional flour may be added if needed to prevent the dough from spreading. The shaped cookies are arranged on a baking tray and decorated with pistachios. They are baked in a preheated oven at 200°C for 45 minutes. The product is sold in packaging suitable for food contact.

If these inscriptions cannot be used directly on the product or packaging, they must be prominently displayed within the production facility where they are easily visible.
Monitoring Mechanism
The production and compliance with the geographical indication are monitored under the coordination of Afyonkarahisar Municipality. The monitoring board includes one expert representative from each of the following institutions:

Inspections are conducted at least once a year; additional inspections may be arranged upon complaint or need. During inspections, compliance with ingredient specifications, adherence to production methods, shape and decoration criteria, and proper use of the geographical indication emblem are verified. Reports are submitted to the Turkish Patent and Trademark Office. Services may be obtained from public or private institutions during the monitoring process. The registering institution is authorized to manage legal procedures.
